*Drum roll please* …….. I am about to share an amazing recipe with you all!
This recipe is for cinnamon roll pancakes. They are sweet, delicious, and taste exactly like a giant cinnamon roll. So if you’re ready to make a breakfast that everyone will love, then keep on scrolling. (P.S. this recipe would be AMAZING for New Year’s Day breakfast!)
My friend and I made these a few years ago and I haven’t made them since. I was scrolling through my old blog, found this post, and knew I had to edit and re-share it on my new blog! I will definitely be making these again soon!

Our pancakes may not have looked as beautiful as those photos, but they tasted just as good or maybe even better! So this post is kind of a review and a recipe as well! Let me know if you make these. (Trust me, you should definitely make these!) Plus, they are perfect for a cold December morning! My fiance and I may be making them for our NY brunch.

Here are the ingredients:
For the Cinnamon Filling:
1/2 cup melted butter
3/4 cup brown sugar
1 Tablespoon of ground cinnamon
For the Cream Cheese Icing Glaze:
4 Tablespoons of butter
2 ounces of cream cheese
1 cup powdered sugar
1 teaspoon vanilla extract
For the pancake batter itself, we used a boxed pancake mix! Easy is the way to do it sometimes.
The cinnamon filling has to sit aside for at least twenty minutes, so make sure to make that first.
Combine the melted butter in with the brown sugar and cinnamon. Mix thoroughly. Once mixed, pour the filling into a sealed bag and let it sit. It took our mixture roughly 30 minutes to be thick enough to use. The mixture should not be too thick but you don’t want it to be liquid either.
Next, it’s time to prep the pancake batter! Now you can make a batch from scratch but we whipped up some boxed pancake mix just to make it a bit quicker!
Now, it’s time to make the delicious cream cheese icing glaze. The original recipe calls for 1 1/4 cup of powdered sugar but honestly that seemed to be a bit too much! If you do end up using 1 1/4 cup of powdered sugar, make sure to add a bit of milk or else you won’t get the nice glaze consistency.
Whisk the cream cheese, butter, and vanilla together. Slowly add the powdered sugar to the mixture.
Once the glaze is made! Go ahead and start cooking up some pancakes!
Once you have the pancakes cooking, snip off a small part of a tip on the sealed bag of cinnamon filling. It needs to be pretty small in order to get neat and tidy swirls. I may have cut off a bit too much on ours… It wasn’t as pretty as we wanted it to be!
When flipping the pancakes, be careful of the butter run off from the cinnamon mixture, as you don’t want it to burn.
After the pancakes are ready and set to eat, I recommend heating the glaze in the microwave for a nice warm cinnamon roll taste!
These pancakes were a definite success!!! They may have not turned out like the image, however, they were absolutely delish! Let me know what you think of this yummy recipe.
